I’ve tried, (God knows I’ve tried) to do the Sunday meal prep thing! It’s just not for me. How do I know if Pasta Primavera will hit the spot on Wednesday? Or perhaps a soup on Tuesday would be perfect! I simply cannot live that way. Truth be told, I would skip dinner altogether and eat healthy snacks all day if it weren’t for one little thing—my family. They do like to eat dinner and since I am the self-appointed cook, that means cooking. 👩🍳
When it comes to planning dinners, winging it has been my M.O. for decades and I’m just about ready to accept that fact. In the past, I have tried to convince myself that I should get into the habit of meal prep but it never stuck and just didn’t feel right to me. Somehow I still managed to cook homemade meals almost every night for a dinner party sized crowd of 7—my family.
I did this all without meal prep EXCEPT for one planned meal prep activity—SQUEEZING THE LEMONS! 🍋 If there is one thing that slows me down in the middle of a recipe, it’s stopping to cut, open and squeeze a lemon. I don’t know what it is about that activity but I hate to do it while cooking a meal. So, I squeeze multiple lemons every couple of weeks which leaves me with a good sized amount that never goes bad. And it takes me about 5 minutes to get lots of lemon juice!
That’s it folks! My only meal prep activity and the fruits of my labor usually last for upwards of 2 weeks. What about you? I’d love to hear any tips or secrets.
Call me crazy, but why don't you just but a large bottle of Realemon lemon juice? It's got to be cheaper than buying a bag of lemons, no? I always have a large bottle in the fridge and it lasts me for months.
