This salad is the perfect blend of all my favorite ingredients! It served as an entree for me and a side salad for my husband Tim and son Michael. There is a fair amount of chopping required but it was well worth it. I had leftovers for lunch the next 2 days!

Yields: 4 to 6 Servings

Ingredients
2 cups small stale bread, buns or pita. (I used hamburger buns)
6 tablespoons olive oil
Kosher salt and black pepper
1 romaine heart, quartered lengthwise and sliced crosswise into 1/2 inch pieces
1 (15-ounce) can chickpeas, rinsed
1 medium (or 1/2 large) English cucumber, halved length wised and diced
1/2 cup pitted Castelvetrano or other green olive, roughly chopped
2 tablespoons red wine vinegar
1 tablespoons drained capers, roughly chopped
1 tablespoons minced shallots
1/4 teaspoon minced shallots
1/4 teaspoon dijon mustard
1 firm ripe avocado, diced
3/4 cup crumbled feta cheese
1/4 cup chopped fresh herbs, such as basil, mint or parsley. (I used all three!)
Directions:
Heat oven to 350 degrees. Placed the diced bread or buns on a sheet pan, drizzle lightly with some olive oil and sprinkle with salt and pepper. Toss, then bake for 10 to 12 minutes, until well toasted. Set aside to cool.
Meanwhile, place the romaine pieces in a large mixing bowl, along with the chickpeas, cucumber, olive and scallions.
In a small bowl, whisk together 6 tablespoons olive oil with vinegar, capers, shallots, mustard, 1/2 teaspoon pepper and whisk well. Pour enough dressing over the salad to moisten; toss well. Note: if you plan to have the salad for leftovers, I suggest that you hold back on some of the dressing so that the salad isn’t wet the next day!
Add the avocado, feta and herbs and toss gently, adding more dressing to taste. Top with the croutons and generous sprinkle of herbs and serve.
