Chipotle Steak Rice Bowl and a Vegetarian Option
With a house full of carnivores, I try to find meals that they enjoy and can be easily adapted for vegetarians like me. This simple rice bowl fits the bill. I typically throw this together if there is leftover steak from the prior night.

Ingredients
1 cup of brown rice
About 1lb of London Broil sliced thinly
15 oz can of black beans for vegetarians
2 red bell peppers, sliced
2 cups corn kernels, cooked
Toasted pumpkin seeds or pistachios (or both!)
Ingredients for the Sauce
1/2 cup sour cream
juice of 1/2 a lime
1 garlic clove minced
1 teaspoon minced chipotle pepper in adoba sauce
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Instructions
Cook 1 cup of rice (3 cups cooked)
Make the sauce by combining all of the sauce ingredients
Toast the pumpkin seeds and/or pistachios
Put it all together in a bowl and voila!
